These Onion bhajis are an easy side dish to make from 3 onions, spices, gram flour (chickpea flour) and a little cornflour, ready in about 20 mins.
Put the gram flour in a bowl with all the spices and the baking powder and add in the water. mix throughly into a batter and leave to stand for 10 mins to thicken. The consistency should be thick and gloopy.
Slice all the onions and mix them into the batter to coat them.
Heat a tablespoon of oil in a frying pan and when its hot, put 3 separate spoonfuls of the onion mixture into the pan and fry.
After 3 mins check the undersides and turn them over if they are dark golden brown (at this stage they become a solid lump so they are easy to turn and cook the other side.
Once both sides are cooked place them on kitchen roll to drain.
Cook the rest of the onion mixture n the same way.
When they are all cooked either serve immediately with mango chutney or place them in an medium (150c) oven to keep warm for the next 30 mins.

- 1 tbsp garam masala
- 1 tsp ground turmeric
- 1 tbsp caraway seeds
- 2 tbsp cornflour
