This is my take on the Italian bean salad. a mix of cannellini beans and butter beans with spring onions, fresh garlic, a birds eye chillis to give it a fiery kick and plenty of fresh basil all dressed in a vinaigrette.
Finely chop the birds eye chill and garlic and add to the serving dish
Add 4 tablespoons of Vinaigrette and allow to mix with the garlic and chilli
Finely chop the spring onions and add to the serving dish
Tear the basil leaves and add to the serving dish
Drain and rinse the cannellini beans and butter beans and add to the serving dish and mix throughly.
And serve.
