This is a very simple to make Indian condiment called Raita that pairs well with hot and spicy Indian dishes and can cool the palate and the best thing is, it comes together in about 5-10 minutes.
It’s one of those recipes that’s so easy, it is sometimes forgotten about, but I thought I’d share this Raita Recipe, as its a great addition to a curry, as it has a great cooling contrast to the spiciness of the Indian dishes.
It can also be served with other condiments such as mango chutney together with poppadoms.
Finely chop a handful of fresh mint and add to serving dish.
Finely dice half a cucumber and add to serving dish.
Pour 250gm (or hal a tub of a large plant based yoghurt) in to serving dish
Stir all the ingredients and add the juice of half a lime and stir until thoroughly mixed
Keep chilled until ready to serve.
Raita
Ingredients
- 250 g plant based yoghurt
- 200 g cucumber half a cucumber
- 15 g fresh mint leaves stalks removed
- 1 lime
Method
- Finely chop a handful of fresh mint and add to serving dish.
- Finely dice half a cucumber and add to serving dish.
- Pour 250gm (or half a tub of a large plant based yoghurt) in to serving dish
- Stir all the ingredients and add the juice of a lime and stir until thoroughly mixed
- Keep chilled until ready to serve.
