This carrot and coriander salad with poppy seeds, walnuts, red chilli in a lime dressing, is a super quick a refreshing healthy salad and oil free.
Begin by grating the carrots and place them in the salad bowl
Finely chop the coriander and add to the bowl
finely chop the red chilli and add to the salad bowel
Roughly chop the walnuts and add to the salad bowl
Pour in the poppy seeds into the salad bowl
Throughly mix all the ingredients in the bowl.
Cover and chill until ready to serve.
When ready to serve, squeeze the juice of 2 limes over the salad and mix together, serve immediately.

- 50 g walnuts – a handful
- 2 limes
- 1 red chilli
