This green bean salad recipe with capers, garlic, lemon and a vinaigrette is perfect for a great summer side dish.
If necessary, trim off the stalks from the beans and place the beans in boiling water for 3-4 mins once the water comes back to the boil. Don’t over cook the beans, otherwise they will become grey and soggy.
Put the capers, a peeled chopped garlic clove and the vinaigrette into a blender and blend all the ingredients.
Drain the beans and while steaming, place in a salad bowl and dress with the caper and garlic dressing.
Grate about a teaspoon of lemon zest and put on the beans, squeeze half a lemon over and then stir.
Best when served warm, or leave at room temperature and serve later (if stored in the fridge remove and allow to come to room temperature before serving).
