Very simple side salad of shredded cooked beetroot, shredded eating apples and shredded basil mixed and finished with a balsamic glaze and a handful of pine nuts.
using a cheese grater, grate 3 large beetroots into a bowl. squeeze the grated beetroot to remove the liquid, pour the liquid away.
Now do the same with 2 large eating apples, grate them into a bowl and squeeze away the excess liquid. Add the apple to the beetroot and gently mix together.
Take at least 6-8 leaves of fresh basil and roll them tightly together and finely slice the leaves. add the chopped leaves to the beetroot and salad. mix gently.
To finish, drizzle over a balsamic glaze and scatter over toasted pine nuts. serve immediately

- 20 g toasted pine nuts
- 2 tsp balsamic glaze
