Savoury plant based mince from a block of extra firm tofu

If you need a dish that requires a savoury mince, like my samosa recipe (see my lamb samosa recipe ). This will allow you to use a block of extra firm tofu and turn it into soy crumbles.

Take a block of extra firm tofu and 2 tablespoons of soy sauce.

take the tofu out of the packet and pat dry.

Now to crumble the tofu – either by cutting it into small chunks and using a fork to manually mash the cubes into a bread crumb like texture or use a food processor and blend the tofu into a bread crumb like texture.

Now pour the crumbles into a dry frying pan and heat gently, stirring all the time for about 3 minutes to dry them out.

Now pour over about 2 tablespoons of soy sauce and stir the mixture over a medium heat.

continue to cook until the crumbles start to caramelise slightly

They are now ready to use in a recipe as cooked mince.

At this stage I would now add my spices I wanted for the recipe.

So if it were Indian samosas I would add a selection Garam masala, cumin and tumeric, if it were a cornish pasty I would add some rosemary and thyme and then continue with the recipe .
