This quick dish of stir fried broccoli and mushrooms could be self contained or part of a larger meal.
Begin by breaking up a large broccoli stem into small florets about the size of a mushroom. Half all the mushrooms lengthways. Slice a red onion into quarters and pull the onions apart into separate single pieces.
Prepare the dressing. take 2 tablespoons of soy sauce, 1 finely chopped red chilli, 1 finely chopped clove of garlic, 1 finely chopped lump of peeled ginger (about a garlic clove size) and 3 tablespoons of water, mixx all together in a cup.
Place the broccoli, mushrooms and onion into a large wok and begin to stir fry with a little oil.
After a few minutes when the broccoli has started charring, pour in the dressing and continually stir until everything is coated. At this point I usually put a tight lid on the wok to allow the vegetables to steam slightly.
After a few minutes when the mushrooms have a colour to them squeeze over the juice of a lime and the chopped coriander and stir.
Serve immediately.
Broccoli, mushroom stir fry with a lime chilli, ginger and garlic dressing

- 1/2 cup freshly chopped coriander
- 1 lime
