These crushed peas are a fresher, version of mushy peas and take just moments to pget ready.
All you need are frozen peas, small onion, some vegetable stock and 6 or so fresh mints leaves
Begin by peeling and finely chopping the small onion and sauté in a little olive oil in a frying pan.
Add the frozen peas and a small cup of vegetable stock to the frying pan. (not too much liquid just enough to have a little sauce for the peas)
Finely chop the fresh mint leaves
After the peas come to the boil, switch it off and add the mint and use a potato masher to crush the peas.
Season with salt and pepper to taste and serve.
