The lentil and edamame salad is a quick and easy salad full of protein and fresh taste using cool cucumber, lime, miso and fresh chilli.
put the cooked puy lentils and edamame beans into a serving dish
Finely chop the red onion and add to the salad
Finely chop the cucumber and add to the salad
Finely chop the fresh red chilli and add to the salad
Finely chop the coriander and add to the salad
mix throughly
make the dressing by mixing the miso paste, soy sauce, mirin or rice wine and lime juice into a bowl.
Pour over the salad and mix the dressing in completely.
scatter sesame seeds over the salad and serve
Edamame and Lentil salad in a miso soy and lime dressing
Ingredients
- 250 gm cooked puy lentils – 1 pouch of cooked lentils
- 200 gm cooked edamame beans – from frozen and cooked for 2 mins
- 1 red onion
- 30 gm fresh coriander
- 100 gm cucumber – half a cucumber
- 1 red chilli
Dressing
- 1 tbsp miso paste
- 3 tbsp rice wine
- 1 tbsp soy sauce
- 2 limes
