Mushroom & Cannellini Tarragon Pie

This is mushrooms and cannellini beans cooked in a tarragon and boullion sauce with a puff pasty top.

Roughly chop the Cannellini beans, slice the mushrooms and finely chop the kale and onion.

Steam the onion, kale and sliced mushrooms in a wok with a lid.

add the beans, the tarragon, the bouillon and the cornflour, with a cup of cold water and stir and cook until it thickens. adjust the seasoning

take the mixture off the heat and pour into an oven proof dish.

unroll the puff pastry and lay over the dish and cut off the excess. add some decoration with any pastry left over and place in a pre-heated oven at 180C for 15 mins or until the pastry is golden brown.

To keep the roof of your mouth intact, take the pie out of the oven and let it cool for 10 mins. Serve with freshly cooked broccoli stems

Ingredients

  • 450 gms brown mushrooms
  • 1 tin of cannellini beans, rinsed and roughly chopped
  • 1 handful of kale
  • 1 tsp dried tarragon
  • 1 tbsp cornflour
  • 2 tbsp bouillion powder
  • 1 cup cold water
  • 1 packet of vegan puff pastry

Method

  • Steam the onion, kale and sliced mushrooms in a wok with a lid.
  • add the beans, the tarragon, the bouillon and the cornflour, with a cup of cold water and stir and cook until it thickens. adjust the seasoning
