This easy to make at home, Nandos macho peas is perfect when you want the takeaway meal without leaving home.
Ready in about 20mins and all in one pan, you can make this as hot or as mild as you like.
Delicious served with a portion of homemade Nandos spicy rice and a portion of plant based piri-piri chicken.
This is basically frozen peas cooked, some of them mashed and mixed with the rest of the peas with mint and parsley in a plant based butter.
Put the peas in a saucepan and bring to the boil.
Once it starts boiling turn take off the heat and drain the water. Leave about a tablespoon of water in with the peas.
Take a fork and mash about a quarter of the peas and then stir this into the remaining peas.
Add the chopped mint, parsley and chilli and stir.
Add a drizzle of olive oil and a knob of plant based butter, a sprinkle of salt and gently heat the saucepan to melt the butter. Stir continuously and they are ready once the butter begins to sizzle.
Nando’s Macho peas recipe
Ingredients
- 600 gm frozen peas
- 2 tsp olive oil
- 1 tbsp plant based butter
- 20 gm mint
- 20 gm parsley
- 2 tbsp red chilli
Method
- Put the peas in a saucepan and bring to the boil.
- Once it starts boiling take off the heat and drain the water. Leave about a tablespoon of water in with the peas.
- Take a fork and mash about a quarter of the peas and then stir this into the remaining peas.
- Add the chopped chilli and stir in.
- Add a drizzle of olive oil and a knob of plant based butter, a sprinkle of salt and gently heat the saucepan to melt the butter. Stir continuously and they are ready once the butter begins to sizzle.
- Add the chopped mint and parsley and stir.
- can keep warm in a low oven until the rest of the meal is ready
