These basic flapjacks are made to satisfy a sweet tooth or provide energy when out on a cycle (see my other site Zozibike for gpx cycle routes ). This recipe is simply porridge oats, a few raisins, some soft brown sugar, plant based butter and golden syrup mixed together and baked into bars.
Great with a coffee.
Put the oven on to pre-heat.
Line a baking tray with non stick baking paper, leave a long flaps of the paper all around the tin (all will be explained later).
Put the non dairy butter, sugar in a pan and heat gently to melt, don’t let it bubble.
Place the oats, raisins and into a large mixing bowl, stir them and make a well. Pour the melted sugars and butter into the well of oats and stir until everything is completely coated in the melted sugars.
Once the mixture is throughly mixed, pour it into the lined baking tray, and use a spoon to pat down into the tray. Using the flaps of baking paper to use your hands to help flatten the mixture down into all the corners and to level it before baking.
Place the mixture in the tray into the oven (180C) for 25 mins
After 25 mins take the tray out of the oven and keeping the baked mixture in the tray and while hot cut into flapjack size pieces.
Now leave the tray to cool (it will firm up while it cools). Once its cooled remove from the tray and cut again and put in a tin ready to scoff.
Raisin Oat Flapjacks

- 350 gm Oats
- 150 gm soft brown sugar
- 100 gm raisins
- 150 gm non dairy butter
Method
- Put the oven on to pre-heat.

- Place the oats and raisins into a large mixing bowel, stir them and make a well. Pour the melted sugars and butter into the well of oats and stir until everything is completely coated in the melted sugars (can take a while).
- Once the mixture is throughly mixed, pour it into the lined baking tray, and use a spoon to pat down into the tray. Now with the flaps of baking paper use your hands to help flatten and press the mixture down into all the corners and to level it before baking.
- Open the paper before putting in the oven
- Place the mixture in the tray into the oven (180C) and bake for 25 mins or until golden brown on top.
- When its ready take the tray out of the oven and keeping the baked mixture in the tray and while hot cut into flapjack size pieces.
- Now leave the tray to cool (it will firm up while it cools). Once it's cooled, remove from the tray and recut and put the pieces in a tin ready to scoff.
