This is a quick and super spicy dish that can be made in moments, you can either use a knife and fork or just fold it up and eat it like street food. Yum.
Thinly slice the tofu and place in a bowl with the piri-piri sauce to marinate for 10 mins.
Heat the griddle
once the griddle is hot place the tofu on the griddle and cook both sides turning evey 5 mins until charred and cooked both sides.
slice all the salad veg and put to one side.
in a small bowl mix a couple of tablespoons of vegan mayo with the remaining marinade and put to one side.
Either warm the flatbread in the oven or use the same griddle to toast both sides of the flatbread.
Now assemble the dish.
Put a couple of spoons of the mayo sauce on the flatbread followed by the griddled tofu, sliced salad and finally topped with salad leaves.

- 10 g red onion – a few slices
- 10 g lettuce leaves – a handful
