A refreshing salad with Puy Lentils, fresh turmeric, fresh ginger, pumpkin seeds, chives, cucumber and red pepper with a lime, coriander and olive oil dressing.
a very refreshing, crunchy salad which is easy to put together with a bit of chopping, squeezing, peeling and stirring.
Put the cooked Puy lentils (I use the lentils that come in pouches) into the salad dish.
Peel the ginger and turmeric roots and finely dice and add to the lentils
Finely chop the chives and add to the lentils.
Finely chop the red pepper and cucumber and add to the lentils.
Squeeze over the juice of two limes over the lentils. stir the lentils mix until completely mixed. The salad could be served at this stage, but I think it benefits from some pumpkin seeds, mirin (a sweet vinegar) and some olive oil.
Add two tablespoons of pumpkin seeds, a tablespoon of mirin and a tablespoon of olive oil and mix.
Salad is now ready to serve.

- 250 g cooked puy lentils – I buy the ones in a pouch
- 20 g fresh turmeric
- 20 g fresh ginger
- 30 g pumpkin seeds
- 2 limes
- 1 red bell pepper
- 1/2 cucumber
- 10 g chives
- 150 g cucumber – half a cucumber
- 1 tbsp mirin
- 1 tbsp olive oil
