These mushroom really lend themselves to turning into a “shredded meat” alternative. this recipe I’ve used a basic chilli/taco set of spices but you could use a BBQ type combo.
using a fork shred the mushrooms downwards by pushing the fork and dragging it downwards, then use the side of the fork to pull away the shreds. Repeat until the mushroom is shredded (rotate the mushroom and use another side). Do this for all the mushrooms.

now gently fry in a fry pan in a little oil, don’t over cook and stir to make sure its not sticking, once the mushrooms start to release their liquids and are hot turn off and give to one more stir.
Now use the warm mixture in your favourite sandwich. I put it in vegan bun with vegan mayo and salad and also a toasted sourdough sandwich with tomatoes and salad.
