This quick recipe is a great alternative to Feta. Simply marinate cubes of pressed tofu in a mix of brine, olive oil, lemon and herbs
Begin by pressing the tofu for at least 30 mins.
While the tofu is pressing, make the marinade. Put in a sealable jar, 3 tablespoons of olive oil, 1 teaspoon of salt, 2 tablespoons of dried oregano, 1 teaspoon of garlic powder, 1 tablespoon of cider vinegar, the juice of a whole lemon and 3 tablespoons of water and shake.
Pat dry the tofu and cut into cubes. Put the tofu cubes into the jar of marinade and shake. Leave the tofu in the marinade for at least 2 hours and during that time occasionally give it a shake.
Leave the tofu in the marinade until ready to use. Which will keep for a 3 days in the marinade in the fridge.
To use, drain the tofu from the marinade and serve.
