These are my version of Walnut lettuce tacos. Ideal as an appetiser, there is no cooking with all the ingredients being raw and instead of traditional wheat or corn tacos, we use gem lettuce leaves. The “meat” is a mixture of walnuts, spices and sun dried tomatoes placed in the lettuce leaf and then on top a large spoon of mango chilli and lime salsa.

Place the walnuts into a blender and turn into a coarse crumb

Keeping the walnuts in the blender and add the sun dried tomatoes and blend a bit more.

Now add the spices, coriander and soy sauce to the blender and blend until the mixture is blended into a fine blend. scrap down the sides during the blending if necessary.

Turn out the mixture into a bowl ready to use.

Now prepare the Mango and green chilli salsa

Take the Gem lettuce and separate the leaves and rinse and shake them dry.

Now take a tablespoon of the walnut mixture and place it on an individual gem leaf. Put a tablespoon of the mango and green chilli salsa on top of the walnut mixture. Repeat until all the gem lettuce is used up or the walnut mixture

Ingredients

  • 150 g walnuts – or pecans
  • 30 g sun dried tomatoes
  • 1 tbsp ground cumin
  • 2 tsp cayenne pepper
  • 1 tbsp soy sauce
  • 30 g coriander
  • 2 gem lettuce allow for some waste

Method

  • Place the walnuts into a blender and turn into a coarse crumb
  • Keeping the walnuts in the blender, add the sun dried tomatoes and blend a bit more.
  • Now add the cumin, cayenne, chopped coriander and soy sauce to the blender and blend until the mixture looks coarse and blended. scrap down the sides during the blending if necessary.
  • Turn out the mixture into a bowl ready to use.
